Instructions

Step 1
Wash the dried kidney beans and leave them to soak in clean water overnight
Step 2
The next day rinse the kidney beans again before before cooking on low with the lid slightly open until the beans are soft.
Step 3
Chop the garlic, onion, spring onion & red pepper and add to the pan of softened beans
Step 4
Add the coconut milk, thyme and a whole scotch bonnet pepper pierced at one end.
Step 5
Stir everything together and leave to cook on a gentle simmer.
Step 6
In a bowl mix together flour, salt and allspice. Slowly add water and mix together well to make a dough.
Step 7
Take out thumb sized pieces and roll into between hands until they look like skinny sausages until all the dough is finished.
Step 8
Add the skinny dumplings to the stew and simmer for 25-30 minutes. Remove scotch bonnet before serving.
