Instructions
Step 1
Preheat the oven to 200°C. Meanwhile, cube the sweet potato and place it onto a tray. Drizzle with olive oil, salt, pepper and some chilli flakes. Cook until tender, about 20 minutes.

Meanwhile, cook the orzo accordingly to the instructions on the packet.
Step 3
Cut the feta and cucumber into 2cm cubes. Cut the mint leaves thinly.
Step 4
When everything is ready assemble together. Add a spoonful or two of olive oil, squeeze the lemon over top and mix everything well. Serve warm or cold :)
