Instructions
Step 1
Tuck in tail under fillet& secure with string. Tie the rest at 4cm intervals & place in large ziplock with balsamic vinegar& marinate overnight,tuning occasionally.
Step 2
Remove from fridge & leave out for an hour to come to room temp. Remove from vinegar & pat dry. Place in a roasting pan,rub with olive oil. Roast at 70*C for about 4 hours.
Step 3
Blacken fillet quickly & on all sides on a smoking grill. Remove from pan & wrap in foil& leav to rest at room temperature for 20mins.
Step 4
Cut into thick slices & serve with sweet mustard sauce
