English Muffin Dough
Instructions
Step 1
1. Dissolve yeast to warm water (108°F), and allow to stand at room temperature for 10 min before adding to flour.
Step 2
2. In a large mixing bowl add flour, yeast & water mixture, salt, sugar, yogurt and gently mix everything together being sure to scrape everything from the sides. This will be a sticky dough, be sure to scrape dough in the center of the bowl and cover with a damp kitchen towel Allow dough to proof at room temperature for 60 min

3. Remove kitchen towel and sprinkle top of dough with all purpose flour. Using a dough scraper or rubber spatula gently turn out the sticky dough on to a lightly floured surface and begin gently forming into a ball as best you can, flour will help dough not stick to you or the work surface. Cover with damp towel and let dough rest for 15 min.

4. Time to roll out and cut! Flour your rolling pin and add a little additional flour on the work surface you plan on rolling your dough out on. Gently roll your dough out to ¼ inch thick circle, now using a 3¼" ring cutter that's been dipped in flour to prevent sticking, get close to the edge and begin cutting your rounds. You should get 8 rounds...9 if you combine the scraps and roll out for an additional round. Using a parchment lined sheet pan sprinkle a little finely ground corn meal or semolina and gently place each freshly cut round on to the pan. Cover with a damp cloth and allow to rest for 15 min.
Step 5
5. Using a griddle or cast iron pan pre heated to medium heat, gently place your rounds onto the hot surface and cook for 2 minutes per side.
Step 6
Remove freshly cooked English muffins from pan and allow them to cool on a wire rack. They can be eaten right away but it's best if you plan on slicing them in half to let them to cool completely before slicing them in half.
Step 7
Enjoy toasted with a little vegan butter and stone fruit preserves.
