Instructions

Step 1
Oven roast carrots till caremlelised
Step 2
Fry onion in olive oil (salt them) for 5 minutes then add garlic and mushrooms.
Step 3
Add splash of soy sauce then red wine and simmer down.
Step 4
Add lentils, then chopped tomatoes and stock, season well and add marmite.
Step 5
Simmer for 30-40 minutes on a low heat, stir occasionally to stop lentils burning at bottom of pan. Once done leave to chill in oven dish.
Step 6
Meanwhile boil potatoes for mash, combine with soy milk and sunflower spread with rosemary, salt and pepper.
Step 7
Assemble cottage pie and put in preheated oven for 20-30 mins until crispy on top
