1 TbsSweet Potato Starch
5gminced ginger

Instructions
Step 1
Dice garlic and mince ginger separately, slice scallion.
Step 2
Marinate ground turkey(or pork/beef if you prefer) with salt, black pepper, egg white, sweet potato starch, minced ginger and chopped scallion. Mix well in one direction and let sit for a few minutes.
Step 3
Prepare and tear mushroom apart, clean with water and drain.
Step 4
Heat up lard or cooking oil in a stockpot on medium high heat, quicky add in diced garlic to cook for a few seconds, throw in some Szechuan peppercorn, add in water(1200-1500ml) and bring to boil.
Step 5
Once broth starts boiling, simply make turkey meatballs with your hands and a spoon, put meatballs in the broth to cook and stir gently if needed.
Step 6
Add mushroom in the broth when broth starts to boil again. Cook for a few minutes until fully cooked. Season the broth with salt, chicken powder and scallion. Serve warm.
