Instructions

Step 1
Preheat oven to 180 C fan
Step 2
Mix halved potatoes in roasting g tin with olive oil and salt then transfer to oven for 40 mins
Step 3
Meanwhile, mix together all the ingredients for the dressing. Depending on your brand of peanut butter you may need to add a little more coconut milk to have a thick, spoonable dressing consistency. Taste and adjust the seasoning as required
Step 4
I’m nice the potatoes have had 40 mins add the green beans and bean sprouts. Add a splash more olive oil if needed, mix up and return to the oven for 20 mins
Step 5
Scatter the potatoes and vegetables with the coriander (optional) and serve warm or at room temperature with the dressing alongside
