½ tsppaprika
½ tspgarlic powder

Instructions
Step 1
Chop the potatoes into small cubes. Place them in a large pot. Fill with water until all potatoes are covered. Cook over high heat and bring them to a boil. Cook for about 15-20 minutes or until you can easily stick a fork through the potato. Drain the potatoes.
Step 2
Heat a large skillet over medium heat. Add 2 tsp. olive oil, potatoes, 1/2 tsp. ground cumin, 1/2 tsp. paprika, 1/2 tsp. garlic powder, 1/2 tsp. salt, and 1/4 tsp. pepper. Stir spices through the potatoes. Let potatoes cook on each side until crispy. I usually cook them about 5 minutes or more on each side.
Step 3
Fill your favorite low protein tortilla with potatoes and top with your favorite toppings. Enjoy!
