Eddie's Chilli
Eddie's chili is so delicious and easy to prepare. I like to make it in my Crock Pot slow cooker, but you could just as easily make it on the stove top. If you decide to cook it on the stove, just add everything to a big stock pot and let it simmer slowly, stirring occasionally, for an hour prior to eating.
Eddie’s chili is a mild to hot, meaty chili that is best served with shredded cheddar cheese and freshly chopped onions sprinkled on top! I enjoy mine with a fresh French loaf or cornbread!

Ingredients

2 lblean ground beef

1yellow onion
large, chopped

1green bell pepper
large, seeds and stem removed, chopped

3 stalkscelery
chopped fine

0.75 table spoonOregano

1 Tablespoonminced garlic
jarred

1Tomato Juice Can
Large

1 x 28 ozcan diced tomatoes with chilies
drained

2Pinto Beans cans
Large

2Kidney Beans
small, cans

⅓ cupmild chili powder

0.75 table spoonsea salt

Instructions
Step 1
Brown the ground beef. Drain. Place in Crock Pot. Add the onion, green pepper, celery, garlic, tomatoes (Rotel), tomato juice, beans, chili powder, and oregano to the pot. Stir everything well. Cover and cook on the HIGH setting for 4 hours or the LOW setting for 6 to 8 hours. Season to taste with salt and pepper. Top with cheese and onions, if you wish.
