Cauliflower curry with chickpeas

Instructions
Step 1
Peel and chop the onion. Melt it in a casserole dish with 1 tbsp. oil. Add the rest of the oil and the curry paste, mix and brown for 3 minutes.
Step 2
Drain the chickpeas, peel and chop the garlic and ginger.
Step 3
Strip the cauliflower of its leaves, wash it, dry it and divide it into florets.
Step 4
Put them in the casserole and add the crushed tomatoes, coconut milk, chickpeas, garlic, stock powder, ginger, chili flakes and half of the chopped coriander. Salt, bring to a simmer and cook uncovered for 25 minutes.
Step 5
Serve cauliflower curry with the rest of the cilantro leaves on top.
