Ultimate staeak sandwich

There's a famous place in my town called the "Penguin" - a small sandwich bar, inconspicuous, hidden between the buildings, not very inviting or promising...
...but it makes one of the best sandwiches in town since 1987!
And of those is my favourite "biftek ficleki" - steak sandwich with mushrooms and peppers, so simple, yet so flavorful.
So I decided to try to recreate it at home so I can enjoy it anytime, and it turned out great! Simple, full proof and it never disappoints. =)
Perfect for a weekend brunch!

Prep work
Step 1
First and foremost - choose good fresh bread for a sandwich.
I like to use ciabatta or mini baguettes, but any good fresh brad will do - just avoid pre-packed toast and similar breads...
If you're using bugger bread, cut to regular sandwich size, and cut across but leave the sides connected.
Step 2
Take the steak out of the fridge so it gets to room temperature, or for at least about half an hour before it goes to the pan.
Vegetable side
Step 3
Start the vegetable side by sauteing the onion in a larger pan.

Add the peppers sliced to thin stripes. You don't have to mix all 3 colours, I just like having more colours on the plate. =)
Season with some salt and pepper to taste and saute for few minutes.

Add the sliced mushrooms. I don't like to slice them too thin because they lose shape and become unrecognizable mush.

Add the majoram, stock cube and water.

Saute for about 5-8 minutes on medium heat but be careful not to overdo it. I used to over-saute my vegetables, but now I prefer leaving some soul and perkiness in - vegetables should always retain some bite and stay recognizable. =)

Close to the end of cooking add the butter in.

Preheat your pan until the oil starts to smoke.

Season the steak with a generous amount of salt and pepper. Don't do this in advance since the salt will draw the moisture out of the steak and we want all the precious juices to stay in!

Start cooking the steak.
For those who cook steaks at home regularly - just do your thing, but for those who are less experienced here are some guidelines:
Cooking time depends on the steak thickness and your preference on the meet doneness.
For a pretty regular thickness of 3 cm (around 1 inch) and medium, cook it for around 9 minutes.
Some say you should turn it more often, but I just do 4.5 minutes one, 4.5 on the other side and it turns out beautifully every time.
After you turn the stake add the butter, garlic and thyme in. Start braising the meet, rub some roasted garlic in, and all that jazz.
If you feel confident you can do this in parallel with making the vegetable side, but if you are less experienced with cooking the stake, you should probably do the vegetables first and then the steak.

Let the meat rest for at least 5 minutes (ideally around 10 minutes) and resist not cutting it to check for doneness! Believe! =)

Now you can cut the stake in slices. At this stage, I like to clean the meat a little and remove some fatty parts I don't like, especially since the meat goes into a sandwich that you eat directly without the utensils.

Start with the open bread on the plate. Add the vegetables and then the previously sliced steak. You can play with the presentation. =)
It would be wise not to overfill it but I am none the wiser when it comes to this sandwich. :D
