Instructions
Step 1
Add 2 tbsp olive oil to a pan and let it heat
Step 2
Add 1/2 tbsp cumin and sauté for 20 seconds
Step 3
Add onion and turn flame to medium and sauté until golden brown
Step 4
Add potatoes, ginger garlic paste and sauté for 3 minutes
Step 5
Add tomatoes, cover and cook on low heat for 5 minutes
Step 6
Add Thai chili peppers, 1/2 tsp red chili powder, 1/4 tsp turmeric, 1/2 tsp salt, 1 tsp coriander powder, 1 tsp cumin powder, mix it all up and sauté for 1 minute
Step 7
Add bell peppers, mix it well, turn heat to low, cover and cook for 8 minutes
Step 8
Check salt
Step 9
Add 1/2 tsp pepper flakes, 1/2 tsp garam masala, turn flame to high and sauté for 1 minute
Step 10
Add cilantro, turn off heat, cover and let it sit for 1 minute
