750 gramspork belly
4 slicesginger
4spring onions
6cloves garlic
25 gramsbrown sugar
75mlsoy sauce
75mloyster sauce
30mlrice wine
white rice

Instructions
Step 1
Begin with removing the skin from the pork belly and cutting into strips followed by 1 inch cubes.
Step 2
Slice the ginger, spring onions and crush the garlic.
Step 3
Place in a sauce pan and cover with water.
Step 4
Bring up boil and simmer for 10 minutes. Using a spoon scoop off the froth (scum) and discard.
Step 5
Drain, throw the vegetables and pat dry the pork with paper towel.
Step 6
On a medium-high heat, add the pork to a wok and cook for 10-12 minutes until it turns golden brown and crispy.
Step 7
Add the brown sugar and mix well. Then pour in the rice wine, let it simmer for a minute and then add the soy sauce, oyster sauce and water. Cover and simmer for 45 minutes.
Step 8
Wash and rinse your rice and put onto boil following packet instructions. Prepare garnishes.
Step 9
Serve and enjoy!
