Ingredients

2onions

2 lbslean ground beef
2 cupsred wine pasta sauce
28 ozdiced tomatoes

5 ozcan tomato paste
½ cupwater
1 ½ tspsalt
1 tspblack pepper
2 tspsugar
1 tspdried basil
2bay leaves
2 tspitalian seasoning
2 tspdried parsley
8 ozmushrooms
fresh sliced
0.5 lbfresh spinach
cooked and chopped
1 lbmozzarella cheese
shredded
1 lbcottage cheese
lg tub
3eggs
16 stripslasagna
NOT oven ready
1 cupgrated parmesan cheese
Instructions
Step 1
Heat oil and cook onions and garlic until soft. Add beef and brown.
Step 2
Drain off excess fat, then, add all sauce ingredients except for mushrooms. Bring to a rolling boil, then reduce heat and simmer for 2 hrs, stirring occasionally.
Step 3
Add mushrooms and simmer for 1 more hour.
Step 4
Cook and chop spinach, lightly beat eggs and add both to cottage cheese. Stir to blend.
Step 5
Grate mozzarella and boil pasta for 10 minutes.
Step 6
Drain pasta and let sit in cool water until needed.
Step 7
Remove bay leaves from the sauce.
Step 8
Preheat oven to 350*
Step 9
In a 9 x 13 roasting pan, lay 4 sheets of lasagna to cover the bottom of the pan. Top with 1/3 of the sauce, 1/3 of the cottage cheese mix, 1/3 of the mozzarella and 1/4 of the parmesan cheese.
Step 10
Repeat layers 2 more times and top with remaining noodles. Top with remaining parmesan.
Step 11
Cover with foil and cook for approx 1 hour. Remove foil and cook for an additional 15 minutes to brown top.
