Ssamjang Chicken Tacos
All ingredients are rough estimates. I eyeball this one a lot.
Canned chicken or slow cooker chicken works nice to get it juicy.
If you slow cook the chicken in stock or such. After shredding, add back to slow cooker to soak up some of the stock.

1 partDoenjang

1 partGochujang

0.5 partmaple syrup

0.25 partsesame oil

Rice Vinegar
or white, to taste

Water
to desired thinness, also dilutes some spiciness

Instructions
Step 1
Add all parts of sauce together, mix thoroughly. Taste to check the desired sweet, sour, & salty. I eyeball it a lot. Sesame oil is optional, I like the nutty flavor. Add more vinegar for sour, syrup for sweet. Salty comes from the doenjang mostly. But I would recommend keeping the Gochujang and Doenjang ratios even. It should be spicy but will loose spiciness when heated in chicken depending on amount used.
Step 2
Add cooked shredded chicken & sauce to a pan (add more if taste isn't there yet).
Step 3
Warm corn tortilla in another pan or cook your own.
Step 4
Layer it in this order, tortilla, cheese, chicken, pickles, lettuce.
