Step 1
1. Fry 2 eggs in pan, sunny side up. Cover with lid, do not flip.
Step 2
Combine egg yolk, dijon, lemon juice, salt, and cayenne in bowl, and blend with whisk or blender.
Step 3
Melt butter in microwave until very hot (1 minute). While butter is still hot, pour into egg mixture and mix.
Step 4
Toast bread or muffin. While bread is toasting, fry two slices of ham. Roughly chop spinach for bed of greens.
Step 5
Place eggs on each piece of bread. Drizzle with hollandaise sauce, or garnish with sauce as you see fit. Sprinkle with pepper or any chosen spices.
