Step 1
Medium dice red onion and bell pepper, finely chop garlic, coarse chop cilantro, crush chips to small pieces
Cook
Step 2
Sauté onion and bell pepper in avocado oil. Once tender, add garlic and Rotel. Cook some of the moisture out of the pan.
Step 3
Beat eggs and pepper together and cook in butter in another pan until they begin to cook. Then pour wet egg mixture in with vegetables and cook until the wets are just wet.
Step 4
Mix in chips and cheese and take off of heat.
Serve
Step 5
Add salt to taste, warm tortillas, place mixture, add more chips for crunch, add cilantro
