Chicken & Sausage Alfredo Stuffed Shells

Ingredients
4 servings

4 slicesbacon
thick cut

8 ozJumbo pasta shells
cook until al dente

Shredded mozzarella cheese
enough for topping
For the chicken

2chicken thighs

1 tspchipotle chili powder

1 tspchicken bouillon powder

½ tspgarlic powder

1 Tbspolive oil

¼ tspcayenne pepper

salt
to taste, optional

For the stuffing mixture

0.5yellow onion
small, diced

1green bell pepper
small diced

6 ozcountry sausage
mild, roughly chopped

8 ozcream cheese

4 zsour cream

½ cupshredded Parmesan reggiano

¼ tspred pepper flakes
For the Alfredo sauce
Instructions
Step 1
Pre heat oven to 400. In large bowl add the chicken thighs along with all the ingredients listed for the chicken









Step 2
In a large pan over medium heat, cook the bacon until crispy then remove it from the pan. Don’t toss the grease

Step 3
Using that same pan cook the chicken thighs in the bacon grease. Once the chicken is cooked through remove & set aside. add the peppers, onions and country sausage.




Step 4
Sauté until slightly brown. Remove & set aside. Chop the chicken up into small pieces. Then add it to clean bowl, along with sautéed veggies & sausage. Then add rest of the ingredients listed for the stuffing.





Step 5
Wipe out that same pan with a clean paper towel. Then add back over medium. Melt down the butter the add the garlic. Sauté until fragrant then add flour & stir before adding the heavy cream.




Step 6
Season with these spices, then allow it to thicken before lowering the heat to low to add the Parmesan cheese. Stir the cheese in until the combine & smooth.



Step 7
Use spoon to stuff the pasta shells with the stuffing mixture. Then using an oven safe dish add some of the Alfredo sauce at the bottom then add the stuffed shells.
Step 8
Add the bacon, mozzarella & more sauce over top. Then top with some Parmesan reggiano before baking in the oven until the cheese melts.

Step 9
Garnish with parsley, & serve while relatively hot.
