Protein Pancakes

This high protein breakfast will fill you up with energy and keep you full for the long haul! I love this for a weekend breakfast. This is not a vegan recipe, but you can substitute all animal products with your vegan option of choice.
The base of this recipe is rolled oats. There are a tons of oat pancake recipes that call for you to blend everything together. But, let's be honest, it feels like you're eating fried oatmeal that way! This shift in this recipe is that you blend rolled oats to create the flour, then pour the oat flour into a bowl to combine the remaining ingredients. These pancakes are light, flavorful and fluffy and will soon become a fan favorite.
