This high protein breakfast will fill you up with energy and keep you full for the long haul! I love this for a weekend breakfast. This is not a vegan recipe, but you can substitute all animal products with your vegan option of choice. The base of this recipe is rolled oats. There are a tons of oat pancake recipes that call for you to blend everything together. But, let's be honest, it feels like you're eating fried oatmeal that way! This shift in this recipe is that you blend rolled oats to create the flour, then pour the oat flour into a bowl to combine the remaining ingredients. These pancakes are light, flavorful and fluffy and will soon become a fan favorite.

Instructions

Step 1
Add one cup of rolled oats to a high powered blender or food processor. Blend until the oats become a finely ground flour; roughly 30 seconds.

Transfer the oat flour to a medium sized bowl

Whisk in the protein powder, salt, baking powder and baking soda until well combined

Add the butter or oil along with the oat milk and whisk until fully incorporated

Add the vanilla extract and maple syrup until fully incorporated
Step 6
Add your egg and slowly fold it in until fully incorporated. Adding the egg last and slowly keeps you from ending up with tough pancakes.

Bring your skillet to medium heat and spray with cooking spray

Pour the batter onto the skillet depending on the size you'd like your pancakes to be

These pancakes won't bubble like wheat flour pancakes will, so flip once you notice the underside is cooked.

Plate and enjoy with your topping of choice!
