¼ cupmayonnaise
organic, divided
4 teaspoonsfresh lemon juice
divided
2 ½ teaspoonsDijon mustard
divided
¼ cupgreen onions
finely chopped
2 tablespoonsred bell pepper
minced
½ teaspoongarlic powder
¼ teaspoonsalt
⅛ teaspoonground red pepper
2 x 6 ozpink salmon
packages skinless, boneless
1egg
large, lightly beaten
1 cuppanko
japanese, breadcrumbs
1 tablespooncanola oil
1 tablespoonfresh parsley
chopped
1 teaspooncapers
finely chopped
½ teaspoonminced garlic
⅛ teaspoonsalt
Instructions
Step 1
Combine 2 tablespoons mayonnaise, 1 tablespoon juice, 1-1/2 teaspoons mustard, and next 7 ingredients(through egg), stirring well. Add panko; toss. Shape mixture into 8 (3-inch) patties.
Step 2
Heat oil in a large skillet over medium heat. Add patties; cook 5 minutes on each side or until browned.
Step 3
Combine remaining mayonnaise, juice, and mustard with parsley, capers, garlic, and salt, stirring well.
