Spicy Thai Style Beef Noodles

Ingredients
2 servings
2 nestsdried flat rice noodles
1rump steak
large, cut to thin strips
1onion
large, finely sliced
2garlic cloves
chopped
1red chili
chopped
2eggs
2 small handfulsbean sprouts
1 bunchspring onions
chopped
1lime
peanuts
crushed
thai basil leaves
Sauce
Instructions
Step 1
Soak the noodles in boiling water for around 5 minutes until soft, drain and rinse under cold water. Set aside.
Step 2
Mix the sauce ingredients together, set aside.
Step 3
Heat a splash of oil in a large frying pan over a high heat. Fry the beef for 1-2 minutes until golden, remove to a plate.
Step 4
Add a little more oil to the pan. Fry the onion, chilli and garlic and beansprouts for 3 minutes. Push the onions and beansprouts to one side of the pan, crack the eggs into the empty side. Allow it to fry for 10 seconds then scramble with a wooden spoon.
Step 5
Add the beef back to the pan with the basil, noodles and sauce. Stir fry for 2 minutes coating everything in sauce.
Step 6
Add a good squeeze of lime and the spring onions, remove from the heat. Serve and top with crushed peanuts and remaining basil.
