Step 1
Char your eggplant over a gas stove or with a blowtorch (about 3-5 min). Then place in a bowl, cover and let it steam to soften the skin (about 5 min).

Mince garlic and cook in a pan over medium heat until fragrant (30 sec). Add ground pork and season with salt and black pepper. Once pork is cooked, season with fish sauce and remove.

Peel the charred skin off the eggplant and mash it with a fork until flat.
Step 4
Beat eggs in a plate, season with salt and pepper, and dip eggplant. Place in a hot non-stick pan over medium heat. Top with some ground pork and pour over the rest of the egg. Cook until each side is golden brown (1-2 min a side).

Eat on its own or serve over rice with some banana ketchup (my preferred method).
