Instructions
Step 1
Slice the end off the garlic bulbs and add Olive oil, salt and pepper. Wrap the whole bulb in foil, ready to roast.
Step 2
Place the wrapped garlic and the tomatoes in a oven proof dish with salt, pepper and a drizzle of oil. Cook for 25 mins on 200 degrees.
Step 3
Meanwhile chop the red onion and chorizo into slices and add to a frying pan with chilli flakes and oregano. Fry for around 10 mins until the onions are soft and chorizo crispy.
Step 4
Remove the tomatoes once cooked and put the garlic back in for a further 25mins.
Step 5
Add the tomatoes to the frying pan with the onion and chorizo (to make a larger family dish 4+ add half a tin of tomatoes and some smoked paprika)
Step 6
Add two headed tablespoons of soured cream.
Step 7
Add a laddel full of the pasta water
Step 8
Check the garlic is all soft and squishy.
Step 9
Add the roasted garlic from both bulbs to the sauce.
Step 10
Add a handful of fresh parsley. If you have a small amount of cheddar of Parmesan you can add that too if desired.
Step 11
Serve the Spaghetti with sauce on top. Top with chilli flakes, salt and pepper and some more fresh parsley.
