Instructions
Step 1
Preheat broiler to high. Wash and dry zucchini, trim, and grate. Trim and slice scallions separating whites from greens
Step 2
Heat a drizzle of oil in a oven-proof pan on med-high heat. Add sausage and half Italian seasoning and break apart as cooking. Transfer to paper towel lined bowl
Step 3
Add zucchini and scallion whites to pan on med-high heat. Cook till tender and zucchini shrunk by about a third. Season with salt and pepper, add to sausage bowl
Step 4
Melt half butter in same pan on med-high heat. Add orzo, toast until golden brown. Stir in remaining Italian seasoning, stock concentrate, 1.5 cups water, and as much tomatoes as desired. Bring to a boil and cook til orzo is al dente
Step 5
Drain excess liquid from sausage and add to pan with rest of butter. Season with salt and pepper. Turn off heat. Sprinkle mozzarella and panko evenly
Step 6
Place pan in oven and broil til top is golden brown. Add scallion greens and enjoy
