Instructions

Step 1
Slice the cherry tomatoes in half and coat in olive oil. Add to a pan and cook until soft. Flip tomatoes as needed. Note: tomatoes can be baked in the oven if preferred.
Step 2
While tomatoes are cooking, make the ricotta mixture. Chop the chives and mix them into the ricotta. Add salt, pepper, and garlic powder to taste. For an extra kick, add some cayenne pepper.
Step 3
When tomatoes are almost done, toast the bread.
Step 4
Spread a generous amount of the ricotta mixture evenly across the toast. Top with the roasted tomatoes, a drizzle of balsamic glaze, crushed red pepper, and more chives to taste.
