Instructions

Step 1
Add rice to boiling pot of water reduce to medium low and cover, cook for 12-14 minutes

Drain and rise beans, cut half of the onion into slices and dice the rest, dice pepper and tomato, zest and juice 1 lime, chop cilantro

Add 1 tbsp of oil to a pan the add sliced onion pepper, season with slat pepper and add small amount of rice vinegar cook for a bit then add chili-cumin spice blend

Add beans to pan and cook till tender add more rice vinegar or water to help

Add sour cream, chipotle sauce, lime zest, pepper and salt

add tomato, lime juice, onion and cilantro to a bowl
