2 x 14 ouncecans chickpeas
2 x 14 ouncecans fire roasted diced tomatoes
bowls
cucumbers
couscous
mint
parsley
cilantro
yogurt
or hummus
olive oil
lemon juice
pita wedges

Instructions
Step 1
Heat the olive oil in a large skillet over medium heat.
Step 2
Add the onion; saute until soft.
Step 3
Add the garlic, spices, salt, and chickpeas and stir until very fragrant.
Step 4
Add the tomatoes (undrained) and simmer for 20 minutes while you prep the other ingredients.
Step 5
Chop the cucumber, cook the couscous, and mince the herbs.
Step 6
Arrange bowls with desired amounts of all ingredients.
