Instructions
Step 1
Heat the oil and butter in a large frying pan over a high heat, add the mushrooms and fry for 5-6 minutes until golden.
Step 2
Meanwhile put the tofu, mustard and crème fraîche into a liquidiser and blend until smooth.
Step 3
Take the pan with the mushrooms off the heat, pour in the tofu mixture and stir to combine. Season to taste with salt and pepper.
Step 4
Spoon the mushrooms over the toast, scatter over the cheese and parsley and serve.
