Not only are these burritos high protein but they’re also low calorie, freezer friendly, & are easy to make! When I have a busy morning, these are perfect grab and go option. This so much cheaper than buying frozen burritos at the store.

Instructions
Step 1
1. Slice nopales and 1/4 of the onion into bite size of pieces. Reserve the other 1/4 of the onion.
Step 2
2. Add nopales, 1/4 white onion, 2 garlic cloves, and 1 tbsp salt to a pan.
Step 3
3. Cook for 10 minutes, stirring often. The nopales will release “baba” (slime) as they cook. Turn off the heat when they have changed to a dark green color. (Full tutorial is in a separate reel)

4. Remove the onion and garlic cloves. Rinse the nopales under cold water until there is no “baba.” Put to the side.
Step 5
5. In a pan, cook the chorizo for 4 minutes. Break it apart.
Step 6
6. Mix in the chopped onions and nopales. Mix well and cook for an additional 4 minutes.
Step 7
7. Add in the egg whites, salt, and combine. Turn off the heat when the egg whites are fully cooked (about 3-4 minutes). Let it cool for 5 minutes.
Step 8
8. Warm up your tortillas for 30 seconds on each side.
Step 9
9. Add 1/5 of the chorizo and nopales (around 2/3 c) to each tortilla along with 28 grams (or 1/4 c) of fat free mozzarella cheese.
Step 10
10. Roll and wrap in plastic and foil to avoid freezer burn. They are good for 3 months in the freezer.
Step 11
11. To warm up, loosely wrap the tortillas in a damp paper towel and place in the microwave for 2:30-3:00.
