Step 1
Sit the feta in a little dish, scatter over the fennel seeds, chilli flakes and lemon zest, then pour over the oil. Set aside for at least half an hour.
Step 2
Cook the pasta in plenty of salted water until al dente, reserving a small cup of cooking water.
Step 3
When the pasta is ready, toss it with the cooking water, crumbled feta, lemon juice and parsley, stirring until everything comes together as a creamy sauce and binds to the pasta.
Step 4
Add some black pepper and a little more olive oil if needed, and serve.
