Cauliflower and Tomato Soup

Instructions

Step 1
Preheat oven to 400

Prepare Cauliflower Rice

Rice cauliflower in food processor
Step 3
Transfer to bowl, add olive oil and chipotle powder then mix.

Roast until golden brown and remove

Prepare Aromatics

Sauté chopped onions in olive oil and butter

Add chili powder
Step 7
Add garlic
Step 8
Add can(s) of roasted tomatoes

Cook for a few

Add vegetable broth

Simmer

Prepare Soup

Step 12
Add most of the soup to the Vitamix and purée
Step 13
Add back to pot and simmer
Step 14
Remove from heat and stir in some cilantro And lime juice

Assemble Soup (Whole 30 without tortilla strips)

Step 15
Add cauliflower rice and tortilla to a bowl

Ladle over some soup
Step 17
Add avocado and fresh cilantro to garnish
