Ingredients

3 packetsbrown rice ramen noodle
3chicken breasts
seasoned with salt, pepper, olive oil, and baked in the oven at 400 for 45 minutes
3eggs
soft boiled for 7 minutes
4 cupschicken broth low sodium
1can full fat coconut milk
4garlic cloves
chopped
1 Tbspginger
chopped
¼ cupgreen onion
chopped
1 ½ cupsshiitake mushrooms
torn
2 Tbspred curry paste
1 Tbspfish sauce
1 TbspLiquid Aminos
1 Tbsplime juice
2 Tbspchili paste
3 Tbspsesame oil
½ tspturmeric
½ tspbrown sugar
Instructions
Step 1
Tear mushrooms into small pieces. Heat 1 tbsp sesame oil in a large pot cook mushrooms until brown. Season with salt, pepper, and 1 tbsp of sesame oil. Set mushrooms aside. Add 1 tbsp sesame oil to the large pot. Add garlic/ginger and cook until fragrant. Add chicken broth and bring to a boil. Add coconut milk, turmeric, brown sugar, liquid aminos, fish sauce, curry paste, and chili paste and lime juice. When broth starts to boil and ramen noodles. Add toppings(mushrooms, egg, chicken, green onion)and serve right away
