ingredients:
6 cups chopped kale
1 can chickpeas rinsed and drained
2 cups diced cucumber
1 cup halved cherry tomatoes
1 diced avocado
1/4 cup pumpkin seeds
spices for chickpeas: 1 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp salt, pepper, 1-2 tbsp nutritional yeast
tahini ranch:
3/4 cup hemp seeds
1/2 cup tahini
1 teaspoon dijon mustard
1/4 cup lemon juice
1 tbsp apple cider vinegar
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1 cup water
Dressing: blend dressing ingredients in blender until smooth!
1. Preheat oven to 425 F. and line a baking sheet with parchment paper.
2. Rinse and drain chickpeas and add them to the baking sheet with spices and olive oil. Bake for 20 min.
3. While it bakes, prep veggies. Into a large salad bowl, add kale then the half the dressing and mix. Then add cucumber, tomatoes, avocado, pumpkin seeds and the rest of the dressing. Toss.
4. Serve and enjoy!!
5. Keeps in the fridge up to 3 days.
