Meatball & Potato Stew

Instructions

Step 1
In a large bowl, add the ground beef and season generously with cajun seasoning. Form into equal sized balls.
Step 2
In a pot on medium heat, add the vegetable oil. When the oil shimmers; place the meatballs evenly around.
Step 3
Brown and let them cook all the way through then remove with a slotted spoon; set aside.
Step 4
Fill the pot halfway with water; add in about a 1/2 cup of roux. Stir and let dissolve.
Step 5
While the roux dissolves; peel and wash the potatoes; cut into chunks.
Step 6
If the gravy is too thin, continue to add roux a little at a time until it begins to thicken.
Step 7
Add the meatballs and potatoes back into the gravy. Season again.
Step 8
Cover (with a crack in the lid) and let simmer on low heat for 45 minutes.
Step 9
Serve over rice.
