Ingredients

500 gramsbeef mince
grass-fed
1can dice tomatoes
½ cupfrozen corn kernels
1avocado
mashed
1tomato
diced
1 handfulfresh coriander leaves
½ cupmayonnaise
2 tspmaple syrup
1 tsppaprika
1 pinchcayenne pepper
sea salt
to season
black pepper
Freshly cracked, to season
extra virgin olive oil
2 handfulsrocket

1 bagcorn chips
Instructions
Step 1
Cook the beef mince in a large hot pan. When it's cooked, add the chopped tomatoes and corn kernels. Mix them around.
Step 2
Mash the avocado with a fork. Add the diced tomatoes and the coriander leaves. Season with salt, pepper and a drizzle of olive oil.
Step 3
Make the dressing by mixing the mayonnaise, maple syrup, paprika, cayenne peper, sea salt and pepper in a small bowl.
Step 4
Spread the corn chips on a large plate. Add the rocket leaves and the beef mince mix on top. Serve with the guacamole and dressing on the sides.
