Pot Roast Recipe Gauger
I'm just trying to save recipes before I lose them. I made this pot roast for Easter once. Very good.

Step 1
Slice one onion and brown in olive oil and butter (equal parts)
With the pot roast, brown on all sides at the same time as the onion.
When done, add herbs and diced garlic and stir 30 seconds, then add beef broth and simmer several hours (At least 2 1/2 hours. Longer is better because it gets really tender, but don't overdo or it will fall apart entirely. It can be made with red wine, in which case finishing the bottle with the dish is the way to go. Just about any red will work, but there's no point in splurging on (unless you want to).), turning every 20 min or so. When it is tender, add the carrots and the onion cut in chunks. Cook about 20 min until tender
