Instructions
Step 1
Boil potatoes until very soft. Mash with butter, salt and pepper and set aside.
Step 2
Fry pancetta until fat loosened and fragrant in wide oven proof casserole dish
Step 3
Add garlic, carrot and celery, sweat for 4 or 5 minuets on medium heat
Step 4
Add chopped mushroom and pumpkin to pan. Add tomato paste and coat veggies. Deglaze with beef stock.
Step 5
Add lentils with some of the tin juice for tickener. Add more liquid if needed.
Step 6
Top with mash potato (add some cheese if you like).
Step 7
Bake uncovered in oven for 30-45 minutes.
