Instructions
Guacamole
Step 1
Cut jalapeño, Roma tomatoes, and red onion into small pieces. Add to a bowl and mix with smashed avocado. Add lime juice, salt, and pepper to taste.



Prep

Cut chicken thighs in bite size pieces. Season with salt, pepper, cayenne, garlic/onion/chili powder.

Cut bell peppers and white onion julienne style, set aside.

Cooking

Heat olive oil in a pan on medium high heat. Once hot, add in seasoned chicken. Cook for ~5-7 minutes (until cooked through) turning as needed.
Step 5
In a separate pan, heat olive oil on medium heat. Once hot, add in peppers and onions and sauté for ~5 minutes or until desired texture is reached.
Assembly
Step 6
Assemble the bowl with rice, black beans, sour cream, guac, chicken, and peppers. Add other toppings like cheese or pico as desired. Serve immediately.
