Step 1
Finely chop the leek, the coriander, half the garlic, and mix in a bowl with the chicken, half the Chipotle paste and grated parmesan. Dust hands with flour and begin to roll into balls, whatever size you prefer.

Heat the oil in a pan and fry the meatballs until golden brown
Step 3
Preheat the oven to 180°c, peel the squash spiralise/peel into ribbons. (You can always just use regular pasta!) Put on a baking tray, toys in oil and season with salt, bake for 10-15 mins
Step 4
Chop the rest of the garlic, onion, halve the tomatoes. Add the onions to the pan for 5 minutes, then add tomatoes, spinach, passata and remaining Chipotle, cook for 5 minutes, season with sea salt
Step 5
Once cooked through, serve the meatballs on top of the squash/pasta.
