1 inchGinger
Piece, Minced

1 tspsalt

4cloves garlic

1 Cupkimchi
Aged

½ TbspGochujang
depends how spicy you like it

½ Tbspgochugaru
korean chili flakes

1 Tbspsoy sauce

2 Tbspgranulated sugar

1 ½ TbspFish Sauce

1 lbTteokbokki
rinsed

1 cupwater

Instructions
Step 1
- Preheat your saucepan over medium-high heat.
Step 2
- Drizzle in sesame oil and fry bacon until lightly browned, about 6-8 minutes.
Step 3
- Add in onions, scallion, ginger, and salt. Cook for 3 minutes until onions become slightly translucent.
Step 4
- Add in garlic, cook for 1 minute.
Step 5
- Add kimchi (chop into bite sized pieces before) and the juice
Step 6
- Sprinkle in Gochujang, Gochujaru, Soy Sauce, Sugar, Fish Sauce, and water.
Step 7
- Allow mixture to boil for 1 minute.
Step 8
- Taste and adjust seasoning, whether you want more fish sauce, soy or sugar depends on you.
Step 9
- Add rinsed Tteok-bokki to the pot, cover with a lid and allow to simmer for 20 minutes, stirring every 5 minutes.
Step 10
- Serve with rice, fried egg, and toasted sesame seeds!
Step 11
- This soup is even better the next day! Just reboil the soup with 1/4 cup water for 8 minutes!
