Instructions
Step 1
Shell shrimp and cook shells in a pan with corriander until pink. Add water and bring to simmer for 30 minutes.
Step 2
In a separate pot, sweat diced onion, fennel, and garlic. Season with salt.
Step 3
Deglaze with white wine
Step 4
In a blender, blend cilantro, Serrano pepper, basil, and some water until smooth.
Step 5
Add in shrimp stock and blended herb/pepper mixture to the pot with onion and fennel.
Step 6
Add shrimp, clams, and halibut and cover. Simmer on low heat until seafood is cooked and clam shells have opened.
Step 7
Adjust seasoning and serve with lemon juice, fennel fronds, and cilantro.
