Instructions
Step 1
Heat oil in a large pan and fry the onion, garlic, carrot & leek until soft buy not coloured.
Step 2
Add tomato purée, chopped tomatoes, butter beans, cider, stock, bay leaf & thyme and simmer for 15-20 mins until the stew has thickened and the veg is tender.
Step 3
If adding sausages snip each sausage into 3-4 chunks, fry for 5 mins then add to the stew.
Step 4
Simmer for 15 more mins, serve with creamy cheddar and parsley mash.
