Instructions
Step 1
Chop onion and prep herbs
Step 2
In a large skillet, brown chicken pieces on both sides in oil (about 15 mins)

Remove chicken from skillet and set aside

Add onions to drippings in skillet. Cook until soft but not brown

Drain off fat
Step 6
Return chicken to skillet
Step 7
Combine undrained tomatoes, chicken broth, bay leaf, herbs and spices

Pour mixture over chicken - do not stir
Step 9
Bring to boil, reduce heat, and cover. Simmer for 30 mins
Step 10
Skim off fat
Step 11
Add rice - make sure all rice is covered in liquid
Step 12
Cover and simmer for 30 more mins - or until rice is tender
Step 13
Remove bay leaf and sprinkle with parsley
