MC - Sesame pork with veggie noodles & peanut sauce
Crunchy carrots, sweet red pepper, fibre-source courgettes – they make for a delicious, sunshiney base for our sesame-crusted pork. And just wait ‘til you try the heavenly peanut sauce: sweetened with honey, zingy with lime.

Instructions
Step 1
Preheat oven to 200C / fan 180C / gas mark 6.
Step 2
Thinly slice the red pepper.
Step 3
Peel the carrots.
Step 4
Remove the ends of the courgettes, but leave the skins on.
Step 5
Prepare the courgette noodles using a peeler/julienne peeler (or spiralizer if you have one) – slice the courgettes into long, thin strips.
Step 6
Repeat with the carrots and set aside.
Step 7
Spread out the white sesame seeds on a plate.
Step 8
Season the pork with sea salt and black pepper.
Step 9
Place the pork on the plate and roll it around to coat in sesame seeds on both sides.

Heat a frying pan with 1/2 tbsp oil on a medium-high heat.
Step 11
Add the pork to the pan and cook for 2 mins on each side, until turning golden brown.
Step 12
Transfer to a baking tray and place in the oven for a further 10 mins, until cooked through.
Step 13
Remove from the tray and keep warm.
Step 14
Meanwhile, make the peanut sauce.
Step 15
Add the peanut butter, tamari, honey and the juice from half the lime to a small bowl.
Step 16
Finely chop just half the chilli (remove the seeds for less heat), add to the sauce and stir all together with 2-3 tbsp water to loosen.
Step 17
Roughly chop the coriander leaves.
Step 18
Rinse the frying pan that the pork was cooked in, then reheat with 1/2 tbsp oil on a medium heat.
Step 19
Cook the red pepper for 2 mins, then add the carrot noodles and coriander and cook for 1 minute.
Step 20
Add the courgette noodles, 1-2 tbsp of water and just half the peanut sauce.
Step 21
Cook for a final minute.
Step 22
Stir.
Step 23
Thinly slice the remaining red chilli and slice the sesame pork.
Step 24
Divide the vegetables between warm bowls, and place the pork over the veg.
Step 25
Sprinkle over the sliced red chilli and drizzle with the remaining peanut sauce.
Step 26
Dig in.
