Burritos with Pumpkin Seeds and Green Chilies

Ingredients
4 servings

2 teaspoonsolive oil

2cloves garlic
minced

⅓ cuponions
chopped
2mild green chili peppers
minced

1jalapeno pepper
seeded and minced

¼ cupgreen pumpkin seeds
chopped

½ teaspooncumin
ground

½ teaspooncoriander
ground

1 teaspoonoregano
minced

hot pepper sauce
to taste

2 cupspinto beans
cooked

4flour tortillas
large

½ cupgrated monterey jack cheese

⅓ cuptomato juice
Instructions
Step 1
In a large nonstick skillet, heat the oil over medium-high heat.
Step 2
Add garlic, onions, chili and jalapeno peppers, pumpkin seeds, cumin, coriander, oregano, and hot pepper sauce.
Step 3
Saute until vegetables have wilted and the mixture is fragrant, about 5 minutes.
Step 4
In a large bowl, mix together chili mixture and beans, using a large rubber spatula to combine well.
Step 5
Lay tortillas on a counter and divide bean mixture equally among them by placing it in log shapes on the edge of each tortilla.
Step 6
Sprinkle an equal amount of cheese on each bean log, then roll tortillas and use the back of a spoon to press in the filling on the sides.
Step 7
Carefully set burritos in same non-stick skillet used to cook the filling (a long spatula is helpful here) and pour tomato juice over them.
Step 8
Simmer until burritos are soft and juice has evaporated, about 3 minutes.
Step 9
Occasionally use a spatula to square off the sides of the burritos to help keep the filling in.
Step 10
Place burritos on a serving platter and serve hot, with additional hot pepper sauce on the side.
