Mixed Bean and Rice Salad

Ingredients
6 servings
400gbeans bean mix canned
4, drained and rinsed
2 cuprice
brown, cooked
20gpine nuts
20gsunflower seeds
20gpumpkin seeds
2shallot
thinly sliced
1capsicum red
diced
1capsicum green
diced
¼ cupcranberries
dried
2 Tbspoil olive extra virgin
1lemon juiced
2 Tbspsoy sauce
GF if required
2 clovegarlic
crushed
parsley
50gcashews
50galmonds
Instructions
Step 1
Combine the olive oil, lemon juice, soy sauce, garlic in a small container and mix tocombine. Season with salt and pepper to taste. Set aside.
Step 2
Combine the 4 bean mix, brown rice, pine nuts, seed mix, shallots, capsicums and cranberries in a large bowl. Stir to combine.
Step 3
Pour over dressing and toss. Serve immediately.
