Omelettes w/ homemade salsa

Instructions

Meat & Veggie mix

Step 1
Heat skillet and add sausage & bacon
Step 2
Once bacon is cooked, drain grease and add back to skillet
Step 3
Add diced tomatoes, chopped Serrano pepper, & diced onion & cook for 5 mins
Step 4
Season with garlic/onion powder, adobo, salt & pepper.
Step 5
Allow to cook for 5 mins on medium

Omelette

Step 6
Heat skillet on medium heat & add enough oil to cover surface
Step 7
Add two whisked eggs to skillet & allow the egg to cover the surface
Step 8
Once bottom of omelette is cooked, flip the omelette.
Step 9
Add shredded cheese to surface of omelette
Step 10
Add mix of meats and vegetables to omelette
Step 11
Add more cheese over mix
Step 12
Close omelette and allow both sides to cook til a bit golden

Salsa

Step 13
Heat small skillet on medium high heat and add 3 tbsp oil
Step 14
Once oil is hot, add two tomatoes, Serrano, half onion, half habanero, 3 garlic cloves & cover to roast
Step 15
After 5 mins, flip all and continue until all veggies are roasted and browned
Step 16
Add all items to blender, cilantro, add 1/3 cup of water, & season with sazon, salt & pepper & blend
