Ingredients
4 servings

frozen spinach
thawed

paneer cheese cubed

1onion
diced, red or yellow

2 clovesgarlic
minced

1 tspginger
minced

¼ cupground cashews

1 bunchcilantro
chopped

2serrano chilies
finely chopped with seeds

Salt

pepper
to taste

1 Tbspgaram masala

1 tspturmeric

1 tsppaprika

1 tspcayenne pepper

1 tspcoriander

1 tspcumin
ground or seed

1 tspcardamom

1 tspfenugreek seed

½ cupcream
optional

3 Tbspdesi ghee
Instructions
Step 1
1. Heat a skillet over medium high heat and add a tablespoon of ghee. Add your cubed paneer and grill until both sides are lightly browned.
Step 2
2. Heat large skillet or Dutch oven over medium heat and melt another three tablespoons ghee. After about a minute, add your serrano, onion, garlic, and ginger, and stir until the onions have sweat through, about five minutes.
Step 3
3. Add all your spices and keep stirring till fragrant.
Step 4
4. Then add cilantro and spinach and cook until everything is combined, another three to five minutes.
Step 5
5. Transfer everything to a food processor and pulse until completely smooth, and transfer back to skillet and add cream and stir over medium low heat or simmer.
Step 6
6. Top off with paneer and serve with basmati rice.
