Instructions

Step 1
Add a half-pound or 227 grams of dry pasta to a skillet. Add warm water to the pan and fill until the pasta is completely submerged by about 1/2 inch of water.
Step 2
At the stove, turn it on high heat and add a 3 finger pinch of salt. Stir the pasta to help avoid sticking. Once the water starts to simmer, set a timer for 1 minute less than the package says, and continue to cook while stirring occasionally until the time is up.
Step 3
Meanwhile, slice the bacon into strips and set in a pan over low heat to render that fat. Cook until the bacon is slightly browned then add the peas stirring to coat them in the fat.
Step 4
In a large bowl where we will toss the pasta, add the ricotta and butter. Add the drained pasta and toss once or twice to melt the butter. Toss in the bacon and pea mixture, grated parm, black pepper, and red pepper flakes. Toss the pasta until a cohesive sauce forms. Serve immediately with more fresh parm or a dollop ricotta over top.
