Instructions
Step 1
In a large oven proof dish add chopped onion, finely minced garlic and baby courgettes chopped in to small equal sized pieces.
Step 2
Create a hole in the centre of the veg/bacon mix and add goats cheese.
Step 3
Grate over the zest of the lemon & then squeeze the juice over. Add salt and Peper to taste & some small pieces of butter throughout the dish.
Step 4
Bake on a low shelf of the oven for 20-25 mins at 170 degrees Celsius
Step 5
Whilst the veg/bacon/goats cheese mix is baking boil your pasta in salted water
Step 6
Once the veg/bacon/goats cheese mix is cooked through and soft mix together with a fork or the back of a spoon
Step 7
Drain the pasta saving some of the pasta water to loosen the sauce.
Step 8
Mix together the veg mix & the pasta with the pasta water & serve
